Working on a Vintners Reserve White Zinfandel. After stabilizing, I splashed racked with a vacuum pump in order to remove gas. During racking I had air bubbles in the hose bewteen the carboys. About half way through I finally realized that the hose had a air leak and therefore I was introducing air into the wine. SG was at .990 prior to adding sorbate, k-meta and fpack, SG was 1.001 after the additions. Did I oxidize this batch?

No you are fine. wine is a tougher than most people think,.

With a white wine you will easily know when you have oxidized your wine as it will get much darker in color before you even start tasting a difference. The best thing to do is not splash rack your wine unless you have a problem like H2S with your wine. I know splash racking is the easiest way to degas your wine but it is also the easiest way to oxidize your wine!

I agree - if you have a vacuum pump - no need to splash rack it - just degas with the pump.

However - keep you sulfite levels up and you should be fine. Absorbic acid will also aid in the prevention of oxidation.

I added the k-meta that was included in the kit. Should I add more?
