Has anyone tried an eggplant wine? We had a plant that we could not keep up with. so i did a double batch of this recipe. We tried some that had been in the bottle for 2 months and it is surprisingly good. Still taste like eggplant but a very fruity eggplant. Sort of tropical.

* 4 lbs eggplant
* 2-1/2 lbs granulated sugar
* 1/2 oz citric acid
* 1/4 tsp tannin
* water to make 1 gallon
* 1 tsp yeast nutrient
* wine yeast

Boil 1 gallon of water
Thinly slice the eggplant.
Put sliced eggplant and sugar in primary fermenter
Pour boiling water over contents in primary fermenter
Allow to cool to room temperature
Add remaining ingredients and cover with clean cloth.
Ferment 3 days
Strain liquid into secondary fermenter
Rack every 30 days until wine clears
Stabilize and rack into bottles

I was thinking about doing this while eating eggplant parmesan the other day! I look forward to hearing about your progress. :)
 
Raw eggplant has a very bitter and unpleasant juice. I always keep it covered with salt for half an hour after slicing to get that bitter flavour out while cooking with eggplant. If that bitter taste goes into wine I don't think it makes a better wine. Never done the wine, just speculating :)
 
I have made a carrot wine before but used oranges and lemons for some flavor but vegetable wine seems like it woundnt be that good but hey, I am curious...

Be interested to know how it comes out...
