I know, I know patience is my friend.
However 2 months into bulk aging and it is not clearing. It is quite cloudy with visible sediment through out the carboy.
Oddly enough my batch of WineXpert Pinot Noir which has been bulk aging for 2 weeks is much more clear.

I tried to degass to see if that is the issue, but there were no bubbles.

Initially I gave the carboy a little rocking action back and forth, thinking the sediment was stuck in the ribs of the carboy. However after a quick rock the sediment actually started floating upward. Which I have never seen before.

I know time will take care of the clearing, but 2 months in a 60 degree basement has caused the opposite.
Should I send it to the garage for some super cold storage?
give it more time?
Rack it?

ideas?

I am just baffled that it is a cloudy as it is, when another kit wine, younger at that is clearing soo much quicker.
 
You should be bulk aging this Premium kit for at least a year. In all honesty 18 months before bottle. I will assure you it will degass on its on and be clear as a bell without adding clearing agents. Cheers!

wine does not degas very well at 60F. Could be part of problem.

Cpan is correct when he says wine degasses slower at a lower temperature. It does degass though and will completely if you give it time. Dont rush it, let it ride. Cheers!
 

yes it did have a pouch of dried grape skins.
Being my first premium kit I did not even think of that.

I degassed this very well prior to cold storage. I used the AIO and racked a few times and later put the carboy under a vacuum.


The reason I am looking to clear, is I am going to run it through a barrel with in 2 months time.

I dont believe it would be in my interest to to barrel age a non clear wine.
Or does that even matter?
 
That is a matter of style. Some say no not before clear because you waste.precious oak on elements that will precipitate out of solution. Other says that tannins in barrel will aide in clearing and the elements that will precipitate will enhance the wine. Cheers!
 
I don't see if you mentioned you used the provided chitosan clearing agent pack, just making sure you did.

I also have a Super Tuscan but the Winery Series and also found that after racking (after the numbers of days indicated when you add the clearing agent) it still had sediment.

I will leave it alone for some time sitting in the 5gal carboy....
