We never filter wine and just let it set until it is clear. WE made some Watermelon wine from Orchard Breezin' for a friends wedding. It was his choice and we did bump up the ABV to 12%. He is coming Saturday with bottles, corks, sleeves and labels.

There is still some fine sediment in the carboys. We do have the All in One pump. I was wondering if we can put a clean and sanitized nylon stocking in the carboy and run the wine through the stocking and rack to another carboy to get most if not all the sediment out. One thought is because of the pressure from the pump it might blow the sediment right through the nylon.

The other thought is to rack with a racking cane to a clean carboy to a pail and then from the pail with vacuum to the 750ml bottles.

IF this were my wine I would just let it set longer or hit it with bentonite but there is not time to do that with only 4 days to bottling.

Any other ideas? He is using clear bottles because of the custom labels he made with their names and wedding date so the sediment if any will be more noticeable.
 
Is the wine completely clear, with the sediment on the bottom of the carboy?
 
It is but once it is moved the sediment is very light and fluffy and moves all around the carboys. We have it in the cellar where it is 62 but the sediment will move all around once we carry them up to the house. I will do that Friday night so it will have some time to settle.
 
We had exactly 28 days to get this in the bottle and last tasting it was very good. I told him that he could have the bar tender pour the wine but not to use the last bit in the bottles. The whole idea was the presentation, at least on our part.
 
sammyk, get yourself a whole house water filter with a 5 and a 1 micron filter...use that with your allinone...not sure if it will get out the sediment your seeing, but, it will give your wine a beautiful shine and it might get that stuff out..
I now filter everything going in a bottle, for my consumption are give aways.
 
There is not time to order it and have it here before Saturday and as I said we do not filter our wine (over 800 bottles so far), we just wait it out.
 
Can you rack before bringing it into the house? Then you can leave the sediment behind.
 
There is not enough light in the cellar to see what you are doing because we did think about that. The carboys are in a rubbermaid container and just lifting them up and out would cause it to float up from the bottom.

We can bring them up from the cellar a day or two before and set them on the kitchen table where we rack our wine. At this point I am not worried about oxidation because it will be drank soon after bottling, except for a bottle or two they will save for their first anniversary. We could rack now and let it set until Friday. Duh, I forgot the wedding is Saturday so it will have to be done Thursday or Friday at the latest.

I have been filtering everything that goes in the bottle and it really is the way to go with the allinone on these early drinkers.
