I think most people syphon the wine to rack it, most of the time anyway.Add another campden tablet per gallon and allow it to sit and clear. After the second racking I always add sulfite to protect the wine and then it is wait until clear then rack again and wait some more for clearing again. Once no sediment falls out you are ready to add a f-pac or simple syrup for back sweetening, If any sugar is added you will need to add potassium sorbate to stabilize the wine and to make sure fermentation does not restart.
