Going to put together viking blood tomorrow. Do I need to campden or heat the cherries?

i would hit them with Kmeta a day before pitching - flash freezing doesn't kill wild yeast or bacterias.

Careful ,,,, the pigment in cherries is very sensitive to concentrated SO2! ,,, when I mixed meta on straight out of the freezer cherry I removed all the color,

The other thing to ask yourself is, is it *really* a concern? The yeast will almost certainly out compete any wild yeast,and I have yet to actually have an issue from other bacteria being introduced

This was my conclusion. I didnt add anything
