It has been 2 weeks and it is still 1.018. This is a Costco chardonnay kit. Rack to secondary or leave it?
 
fermentation is stuck. need to rack and stir well and see if it restarts make sure temp is at least 70 deg f. taste it you might like it this sweet if so let it go util clear and sujfite.
 
Do I add more yeast? I tasted it and it is very sweet. First time with this problem. It is still bubbling, but slowed down a lot.
 
What is the temp?
4 1/2 brix is high. Get the temp up to mid 70’s for a day with a little sprinkle of EC-1118 yeast. About half the packet. Your gona have to warm it up now to get it going. I use a warming belt to achieve that.
 
I racked to a carboy and moved it to a much warmer room. Going real good now. I didn't add any yeast yet.
 
Great! Just keep it warm and it should finish. Environment was probably too cold.
 
I didn't realize that temperature was that big of a factor.
