Went to a cider place today to get a gallon and some pies because they have the best pies in CT. and they had 5 gallons of cider with a 5 gallon carboy, multi fit bung and airlock for $50 which I didnt really want to spend but couldnt resist so tomorrow Im off to my local supply store to get some Ale yeast!
 
What's your recipe wade? And does this need an aging time, or is it ready to drink right away like a hard lemonade? I was thinking about making this as well, but would put it on hold if its not going to be ready until Feb.
 
To be honest its my first time making this!

I just bought some pressed right in front of me juice and will throw some ale yeast in it tomorrow and some ascorbic acid, 2 1/2 tsp acid blend, and some yeast nutrient and let her rip.

You don't have to add any sugar to it wade? I too will be keeping an eye on this one. Wanting to try one myself
 
When I was a younger man, our homemade apple juice always ended up fermenting on its own. Nothing added. It was naturally carbonated, cloudy and low in alcohol--delicious chilled.
 
It was about 1.050 all on its own but today I changed my mind on this since a friend gave me 15 lbs of Orange Blossom honey so I decided to do Cyser instead to kill 2 birds with 1 stone as I have a lot of grape pomace coming in about 1 week and will need as money carboys as possible. I added 13 lbs of honey and brought it right up to 1.085 leaving me 2 lbs for my Dandelion wine to sweeten back which should be more then enough as its a 3 gallon batch. Besides I really didnt want any more carbonated apple after i thought aboiut it anyway as u have 6 gallons of crab apple wine that will be force carbonated as the last batch was a total winner.
 
Sounds really good and what a great deal. I love cysers, especially spiced!

I also added 2 cinnamon sticks a just a pinch of ground clove and a little brown sugar which brought it up to about 6.5 gallons.

One uses brown sugar, raisins, dates & spices, the other muscovado sugar, DME, apple butter & spices. I've made both the FB just turned 2 years old and is fantastic. The ABC is still in the primary and last I checked its at 19% and unbelievably smooth with a nice warm finish.

That first one is almost exactly what I used except no water and instead dissolved the honey in warmed up cider.
 
I don't bother with the water. Seems kinda silly, just add more apple cider.
