I’m new to wine making in fact I’m relatively new to wine in general. It is only in the past three years; since I retired that I’ve started drinking wine and I rather enjoy it. I just want to make a wine that taste good and I can say that I have made myself, I’m not and don’t expect to be a fine wine maker or connoisseur. I know that for what I am making I could go to the local establishment and buy it cheaper and easier, but I am enjoying it so far. I have been lurking around for a while and have learned quite a bit from this site. My first attempts have been from Welch’s concentrate and apple cider. I will probably ask a lot of questions as I learn and it seems that there are a quite a few very knowledgeable members here. I hope you’ll put up with a few silly questions now and then.

Welecome to winemakingtalk and wine making in general. My wife and I are not fine wine makers nor are we connoisseurs. When I started wine making a in 2010 I thought there was something magical and mystical about the whole process. I still do. We rationalized that wine per bottle is cheap compared to store bought wine. But then carboys start to multiply, you decide to buy some upgraded equipment, add a vacuum pump for degassign and transfering wine, buy some laboratory equipment to feed the compulsion.... and the per bottle cost goes up a little. My current rational is those are part of the hobby. The cost of the wine per bottle is still cheap.

We have found that we both love tasting wine from different regions around the world and that has been fed by our wine making. We've discovered a local wine shoppe (not a LHBS) that does weekly and monthly tastings that is defining how we pick and prioritize our kits purchases.

The site has been great. Inspired me to make a strawberry chocolate port last january. We thought it was good but just had a sample this afternoon. OMG, its getting better. Made a couple small batches of mead (too soon to tell) and a hard cider using fresh pressed cider from a local orchard which I bottled in beer bottles and primed for bottle carbonating. And you have to read up on making skeeter pee. It is great stuff.

The people on the site are great and always willing to answer questions or make suggestions on appropriate topics to search.

Jordan, was that my recipe for the straw/choc/port? Mickey, we are here to answer any questions you have about wine or beer making and many other things also like cheese etc. Glad to have you on our site!

Yes, It was your recipe and was my first non-kit experience. It is getting better every month. At first the chocolate flavor was "missing" and the wine was very strong sweet and alcohol forward. Today's sample was much milder and the chocolate was comming thru on the finish.
 
From one resident of the Bluegrass State to another....welcome. I hope you find the ultimate recipe that you are looking for. You have quite a few wineries in your area, makes for some nice roadtrips.
