Hi Everyone,

I am very new at wine making and am looking forward to all the information from everyone. I started out by making wine through frozen concentrate with a balloon on the top of the bottle. Now I have increased my supplies to chemicals, airlocks and racking! It is very exciting.

Anyone have a good wine recipe that can be used relatively quickly so I can have some samples that are ready? I have watermelon, blackberry and blueberry done, but most of the recipes state that they are much better if you wait a year to drink them.
 
Welcome to the forum it sounds like you still have a lot to learn about wine making but don't feel lonely I still have a lot to learn myself feel free to ask questions there are a lot of wine maker's on here that can help us and then we all learn good luck

Welcome to the forums.

Aging is pretty much the rule for nearly all wine making. Some wines taste better young than others, but all wine tastes better after a year. In my experience, grape and muscadine wine tastes pretty good young, but they still have a bite to them. The Apfelwein is supposed to be good as an immature wine. Don't know yet since I am two weeks into my first batch.

My favorite wine is muscadine. I have an abundant supply, and it has a great flavor right out of fermentation. But not nearly as good as 2 years later. I left a gallon aging since 2008, and it's much better than the young wine.

Some recipes are drinkable young, but nothing substitutes aging.

Fruit wines you can usually get away with 6 months aging. I just bottle the strawberry and apple spice that i started back in april - and they are great tasting.

There are plenty of fruit wine recipes in the recipe section.

You want something fast while you are waiting for the rest to finish, make up a batch of skeeter pee. There are plenty of recipies on here for it. Word of warning, tho, when you get to tasting it and it tastes pretty good, you best start on another batch. Seems like we are always running out of the stuff. lol. Anyway if you are interested, give it a try. Arne.
 
welcome! you will find lots of good help here, lots of good recipes, too! i do highly recommend trying the skeeter pee as u do regular wine also. it's fast drinking and gives u something while u r waiting:db
 
Welcome to a great forum. Another easy to make quick drinker would be any mist wine kit if you can get them. They are low alcohol/sweet, drinkable immediately and great for parties.
