This is my eight year of making wine from grapes. I do all my own chemistries. I have targets that I am trying to hit, like pH and TA. I'm interested in exploring new yeasts. I would love to use a genetically modified yeast, Go CRISPR!. That should really rock winemaking.

? crisper yeast ? WOW. There are some which have been produced in the UW biochemistry department and they say the fermentations are interesting but they aren’t legal to release into the environment without approval. Where will you source your yeast?

There are conventional cross breeding yeast available, for example Renaisance has a line of no H2S producers.
