I want to know if I can clean and sanitize my equipment the evening before my fresh frozen MM juice arrives. Is there a statute of limitations so to speak?

I would wait and sanitize the small stuff needed just before using. If you use K-Meta, it's protection would be gone by the time you got to use it. For the bucket, you could clean it the day ahead and put a cup of full strength K-Meta(sanitizing strength) in the bucket and seal it up with lid and airlock. That would keep the SO2 levels high enough to keep them protected.

I use sodium metabisulfite to sanitize. Would the
recommendation be the same?

Yes using Na-meta would be the same as K-meta.....If you can fit the small stuff inside the bucket then they would also be good to go.

I was going to tell you that too Joan, but I wouldn't put anything metal in the bucket overnight. As long as it's plastic or glass it would be fine. It's like PeterZ's humidor bucket.
