When adding water to a kit,, do you

1. Add 5 gallons of water to the mix, or


2. Add enough water to the mix to get it to the 5 gallon mark.?

I ve done both.

My recipe book doesn't use that terminology. For a Mead it says add 3lb honey to 1 gallon water.

But a 1 gallon jug full of water will not hold the 3lb + a gallon of water.
 
OP is referring to kit wines, not mead recipes. Kits are final volume, 6 gallons or whatever is called for, but generally 6 gallons total.
 
If it says "Add 3lb of honey to 1gal of water", I'd start with a gallon of water, then add 3lbs of honey to it. This implies that you'll need a container larger than 1 gallon.
 
Even in making my simple syrups for back-sweetening or adjusting the starting wine must the results are normally pretty close to - 1 cup water plus 2 cups sugar equals about 2 cups simple syrup.

So for Meads or combinations with disolveable item, the result will be something less than 1 + 1 = 2 and more than 1 + 1 = 1 Another case of "It depends." :db
