Ideas?

I'll be moving in a month and have 12 lbs of Wildflower Honey to use in the next week. I'm thinking of a 5 gallon mead, perhaps the following:


Vanilla Cherry Melomel (using vanilla beans, vanilla extract, and Oregon's Cherry puree)


Ginger Cinnamon Metheglin


Chocolate Orange Mead


Chocolate Almond Mead


If you have made any of the above, or have a better idea, I'd appreciate the feedback.
