Hello! Sorry if this has been covered before, but I'm new to this whole thing.

So I started the Coastal Red kit a few weeks ago, and racked off of the lees into secondary last week. On the tenth day (which is this saturday) I'm supposed to degas, add the k meta, k sorbate, and clarifying agent, and continue to 'degas'/mix everything.

Here's the rub... I have to go to a wedding straight from work and won't be able to do it until Sunday. Will one day on a kit really ruin anything? Should I do it a day early? Or a day late?

You're fine, I more often than not leave my wine in secondary (topped up to within three inches of the top) for two weeks. That's usually after 5-7 days of primary. Just make sure it's topped up and has an air lock.

Agree with the above. It's not uncommon for me to have a wine in secondary for 4 weeks. As long as it is topped up, you're fine.
 
Thanks for all of your suggestions! I ave one problem, though. The directions explicitly state to NOT top until degassing. OH NO!
 
That's more of a mechanical issue, not having room to stir. I always rack to a primary bucket to degas and then go back to the carboy. Problem solved. The kits are really pretty forgiving as long as you use common sense.

You will be fine.. A day or two later is actually better than earlier since your gravity reading may not be there yet.
