I saved the skins from a winery series merlot (RJ Spagnols). Would it be a good additive to the island mist? I'd thaw & get to room temp. & add throughout primary.

I'm not sure what value the saved skins will give to another kit, but I would use the skins with a standard wine, not a mist wine. The mist wines are all about the fruit flavour, not the wine base.

I thought it may add some texture / mouth feel to the thinner wine..

But, that's why I asked. I wasn't sure.
