Issues with a cold box plan?

I will need cold bulk and bottled storage from May - Sept. My only workable space is the garage. Outdoor temps get well into the 100's, the garage perhaps 10 degrees cooler. I want to be able to store a 30 gallon barrel/container, four 5 gallon carboys, as well as some bottled wine.

My thought was to make a well insulated box, that would double as a workbench. I was thinking a small $100 window AC unit, controlled with an external temp control unit (if necessary). If lack of humidity is going to be an issue, I'm not opposed to synthetic corks.

Anyone do anything similar? See any issues?

For temp control, I highly recommend this little unit...been using mine for the past week and it works really well -- "set and forget" (not sure what your budget is, however):
