That is significant. Those are HUGE grape packs!!! A little closer than before to fermenting fresh grapes because of all those skins. Should make for much better flavor and mouth-feel.

I would caution some of you that you may have an issue trying to ferment these kits in a standard 7.8 gallon fermenter. With the last Meglioli kit I did, which had one of these grape packs, I had to move up to a 10-gallon fermenter. The must with grape pack in the standard bucket was so close to the top that I figured any foaming at all would have caused the bucket to run over.

I believe these new kit/grape pack combos will make buying a bigger fermenter very worthwhile.

I think Im going to have to try the Barolo in this. Ive had the Meg Barolo and I have to say it was the best bottle of wine Ive ever had to date. I know this isnt the Meglioli but Im sure it will be darn good.

Are you sure it is 8 kg and not 4 kg which would be about 10 pounds or a bit less? George has 4 kg listed on the website. It is still a significant amount of skins! They should make a very nice wine!

The email that went out yesterday as well as the FVW web page said 8kg, I checked it twice. But your right, it now says 4kg!

Still that is 8.8lbs which is one heck of a grape pack. The Cellar Craft standard grape pack is 2kg. The Super pack that comes with the Limited Release kits is 2.8kg.

The grape pack bar has been officially raised! :br

Yep, I think it is the 8KG big guy. It is going to raise the liquid level in the fermenter for sure.

Good call on the Barolo, Wade. My Barolo is the Meglioli, but with that same grape pack, the Ren. should be very, very nice. Actually, I wonder if providing that grape pack with the slightly smaller kit might not hurt Meglioli sales later on.

My friend's wife is asking me to help her get him a complete wine making equipment setup and a couple of kits for Christmas. I really like George's Premium equipment package and guess which types of kits I am going to recommend she buys for him? Renaissance Impressions!!! Helping her spend her money on wine things - I feel like a kid in a candy shop. :h

My friend is very serious, since he has a nice vineyard started, so starting off with that big package is not really overkill. He already is committed to growing grapes for wine to the tune of about 15 thousand dollars.

George responded to my e-mail and wanted to know if he should send out a correction or if it would be too many e-mails. I think but am not sure that he meant they are indeed 4 kg.

I spoke to him as well today and he confirmed they are 4kg, not 8kg.

That sort of changes my opinion a little, but they are a nice, rich, gooey pack, though. It still should be a super good kit and much better than when no grape pack was available for the same kits. At least the kit should easily ferment in a 7.8 gallon fermenter.

I do hope George will clarify the 4Kg fact on his web pages. Would be nice if like CC, MM would sell the grape packs separately.

volume

are you talking about a open bucket type fermenterfor that type of bulk?,thats what I use all the time.

I bought the Castel del Papa. The box says 16 liters kit but Georges site says 18 liters (I assume the grape pack is the additional 2 liters). Two sets of instructions come with the kit. One is for a regular Renaissance, another is for an All Juice with Grape pack The Renaissance instructions say to add water to bring up to 23 l mark, while the All Juice instructions say nothing about adding water.

Should I follow the volume on the box and bring the 16 liters of juice to 23 liters and then add the ALL GRAPE PACK? Or should I add the juice (16 liters) + the ALL GRAPE PACK (2 liters) and then add water to 23 l?

You should add water to bring the volume up to 23 litres from 16 and then add the grape pack. That way, when you remove the grape pack, you'll still have approximately 23 litres. good Luck!!

Ditto. Don't know why it would have both sets of instructions.

I was confused when George's site said it is an 18 liter kit with the box saying 16 liters. I think one set of instructions is for the regular Renaissance kit, while the other set tells you what to do with the ALL GRAPE PACK.

Definitely confusing. As long as you dump whatever volume is in the bag into the Primary first then add water to 23L you are good to go. I think all the kit manufacturers do the same thing as far as labeling on the box. Keep us posted!

Thank you all for the advice. I ended up adding the 16 liter kit into the primary and added water to 23 liters: after that I added the grape pack and stirred. Initial SG of 1.102 @ 60F. Looks good so far, I hope.

That is exactly the same sg I git a few days ago with my Barlolo!!! I also added the raisins with mine and didnt take an sg later but Im sure it went up just a little more. I wouldnt add it to a Castel though. Any idea what you are going to do with your raisin pack?

The Castel del Papa only came with a grape pack, no raisins.

I did experiment with a MM AJ Montepulciano. Not only did I add a Cabernet grape pack from George, but also tossed in 1 lb. of zante currants at day 3 (vitis vinifera variety and known as 'raisin of corinth'). I fermented dry in the primary, squeezed both pack and raisins afterwards, and let it sit in carboy for 7 more days. I just racked and stabilized. It has a nice fruity taste with some body. Yeast (RP-15) had no problem at all. I did use Go Ferm Protect and Fermaid K as per the instructions.

I did 3 castel del papa,s on Sunday too, I used the supplied Grape pack plus a Syrah Grape pack. I used Bm 45-Icvd 80-&D21 yeast then will blend them when they go in the Barrel.
