It is a "salt" As long as it is kept dry and sealed from humidity, pretty much forever.
The ions are only able to separate when dissolved in water. It can pick up moisture if the bag is not sealed.

In the original sealed container, in a cool dark place, it will last for years.

Otherwise, in a closed container in a 45% humidity environment (cool and dark), 6 months. After that, it is still good, but may not have its rated potency.

Another note never breath in the fumes from Potassium Metabisulfite. I usually take a breath, open container and add what I need to carboy. Replace lid and exhale then take a step back. The fumes will damage the mucus membrane.

Keep all chemicals dry, cool and away from kids reach.

This is good to know.
I tend to keep all my empty carboys filled with K-meta solution.
Everyso often I take the bung off and take a whiff to make sure it is K-meta and not water (I am forgetfull).
I get a nice burning sensation in my nostril and howl like a dog.

I also do the same to my bag of unwatered k-meta.

I will have to make a habit of not doing this anymore!

Elmer, wave your hand back and forth and take a very short and slow sniff. Keep your face a foot away from the carboy. You'll know if it's still good.

I don't store carboys with K-Meta. I allow them to dry then store until next use.

Allow your "stuff" to dry after rinsing. You'll sanitize prior to next use anyway,, right?

For equipment sanitization purposes, it is cheaper to use Na-Meta. Same result.

I open my cooler, and move my head towards it. I can judge the "potency" by how close I have to get before I start smelling the sulfur. If I have to get really close, it is time to add more NA-Meta.
