Ok, fermentation is completed, finishing at .998 over course of 4 days. Added 1/8 tsp K-meta, 1.75 of Paul Mason brandy, the F-pack to my primary fermenter, racked the port, leaving oak and lees. Splash racked to a clean 3 gallon carboy and had enough left over to make an additional gallon with what was left over from 1st racking. Smells great, now the wait. Plan to rack in 3 months, maybe at 6 months. Plan to add sorbate and finings prior to bottling, a final rack, filter and bottle. I'm getting a Buon Vin filter for Christmas, what filter should be used for this port? Thanks...this is fun.

I just wanted to add that I pulled the trigger on a double order of this and both kits have 2 reserve packs in them as mentioned before. I assume they may have changed the f-pack blend to a smaller volume to use in other kits and just doubled the pack in the port to regain the same volume.

Also I'm not too certain which filter to use on a port but for almost anything I have done, I used a 2 for my mini-jet which seems to add some good polish to the wine with out taking much away flavour wise.

Now I just need to make some room in the wine room so I can get these started.
 
Just getting these under way today and am a little unclear about the clarifying stage with adding the f-packs, clarifying, and fortifying.

Once this ferment hits 1.01 I plan on adding the yeast nutrient and sugar to bring back to 1.03 to reduce the amount of brandy when the fortifying comes around.

once less than 1.00 I will rack to carboy add oak for 10-12 days.

This is where things get a little fuzzy for me as I plan on not using the sorbate and letting the high abv and the additional brandy to help against any chance of re-ferment..

Do I add k meta then clarify before adding the brandy and f pack at the same time?

or do I add meta, brandy, fpack then clarify?

Any help would be great as I think I am over thinking this and just can't seem to figure out the right way LOL.
 
I added K-meta, brandy and flavoring. Let it sit for a bit, actually racked it yesterday with my new allinonewinepump (had to try it), going to bulk age it for 6 months and bottle, a month prior to bottling I'll add the fining, sorbate and then rack and filter before bottling.
 
I would add Sulfite and fining agents, let it clear, rack off the fines then add Sorbate, stir well, add the f-pack, stir well, fortify with brandy.

No sense in adding and then losing any of the f-pack or brandy to a racking!
 
Sounds good. I think I'm going to let it finish. K-meta, clarify, brandy then f pack to avoid using sorbate for re-ferment.

Also hoping to bulk for a year before bottling. Because of this higher alcohol content would there be less sulphite additions needed over the year?
 
I sampled mine yesterday, very, very good. Waiting will be tough I think. N.B. my kit also came with two F-packs, I and some other posters thought that it was in error, as previous kits only contained one.
But, IMO two F-packs would have been much too sweet for my tastes, so, I'm glad I only used one. Thus another issue with the poor instructions, that didn't even mention one F-pack, never mind two. (I did not call MM, which I take responsibility for, as they could have straightened out the questions that arose). But, I'm still happy and anxious about the product and plan to purchase it again.
 
You can use less sulfite but in reality we as hobbiest's typically stay lower on the sulfite level anyway so why risk it?.
