Has anyone experimented with this wine? I made a batch last year and another this spring and it makes a good light summery wine. But I made the mistake of planting lemon balm and I now have it crowding everything else out of my garden. So, I am wondering if a second harvest (there is tone of it) would make as good a wine as the spring harvest. Also, can I toss in the whole plant, leaves and stems or would the stems be a negative? Any hints are greatly appreciated!
