I started what was going to be a skeeter Pee, used Cabernet slurry, added 16 cups of sugar and it is about half way done fermenting.
I have decided not to move forward with the lemon and make Skeeter Pee,
(because I have to much now) so any ideas what I could add after it ferments dry. I was thinking about adding sorbate and then add some sort of fruit concentrate. Normally you would add this up front, but what are your thought about adding it after it reaches dry.
 
Apple Kiwi Strawberry or some form of grape for back sweetening.

Since you started with a slurry then ferment dry and use no more than 2 bottles of lemon juice. Once stabilized and aged a bit you can back sweeten with them. How many I can't say exactly. The O.Orchard Apple Kiwi Strawberry isn't as sweet as the blue. pom. I just used 4 cans of the A.K. Straw. and the gravity barely hit 1.000 This was for 5 gallons. You are just gonna have to wing it and sample as you go.

I could be wrong but if you didn't add any lemon, then I think this is what you would call a second run wine and you would proceed the same way as you would on a first run wine.

Also if this is what it is then it would be a early drinking wine and not as full body as your first one.
