I started a Luna Rossa on Jan 29, 2014. Went to secondary fermentation on Feb. 5th, (SG was 1.007 - good to go according to instructions). The fermentation activity is still very strong, (Feb 9). Wine has been blowing out of the airlock. Have I created a monster?

Has anyone else seen this or made this wine kit? I am fairly new but have made about eight kits. I have never seen such activity eleven days after the start.
 
According to the instructions, I am suppose to clear the wine in six days. What happens if you clear the wine when the yeast is still active?
 
No, don't clear it until your SG is lower. Your instructions reference both a time (which you refer to above) AND an SG target:

From the instructions:
After 10 days, check your specific gravity. It should be 0.996 or less. If it is higher than 0.996 wait 2 days and measure again–remember, temperatures below 22-24°C (72-75°F) will extend fermentation time.
