I'm doing my first batch of Wine undergoing malolactic fermentation. I'm wondering if it is appropriate to add potassium metabisulfite to the carboy while the wine is undergoing a malolactic fermentation?

Congrats on doing MLF!

I skip the kmeta and add malolactic nutrients.

Have you considered how you'll determine if MLF is complete?

I was told that if I was going to not bottle for 4 or 5 months anyway I didn't need to bother testing. A nearby wine/beer making shop is owned by a chemist and I was told today that he was working on a process that they hoped,would,run about $30.
