I have a gallon+ of Mango wine going right now. Cleaning the mangoes is the worst part, you will loose about 60% of the purchase weight. There are a couple of recipes on Jack Kellers site. I followed the one from mangoes not the one from juice. Just be sure to measure your own sugar.

It is also pretty pulpy, so I would suggest making a good bit more than your plan for the finished product.

I used recipe #1

I planned a 4 gallon batch last summer that only turned out to be about 3 gallons when it was all over with. It is still bulk aging but it is ready to bottle whenever I get a chance. The fruit processing and the pulp are a huge pain. I would recomended a straining bag for the pulp. I was very impressed with the end product. The aroma and golden color are great and even though it was a lot of work, I will try another batch next time I find cheap mangoes.

I used a grain bag from the LHBS worked pretty well, but there was still a good bit of pulp. Nothing a few racking wont cure

I made a 6 gal batch with the yellow mangoes, it is outstanding and the pulp is nothing a little time can't fix as in settling out. I sweetened it to 1.020....wish we had mango's more available, used about 4 cases single level. With the 6 gal batch there is always plenty to top off the 5 gal carboy as it is racked and clears.
