So I currently have a WE kit going right now. I just got a new Mityvac to try for degassing. I put it in and pump it up to about 20" of vac. It deff pulls out co2 but only for 20 min or so before the vac drops back down. So I pump it back up and repeat and repeat etc..... This has been going on for a week now. Should it be taking this long? I did degass with my drill attachment first. I was just using the Mityvac to make sure I got it all out. My other concern is that I put the clearing agent in the kit when I thought I had it all degassed with the drill degasser. The instructions say it won't clear unless it's completely degassed first. So hopefully it will still clear. Thanks for any insight. Nick

Once fully degassed, you should be able to hold 20, or close to it, for an hour or more. Are you sure you don't have a leak somewhere?

What is the temp of your wine?

It never drops below 16. I just figured when fully degassed it would hold steady at 20? It probably takes an hour to drop from 20 to 18. But I do see some tiny bubbles when I pump it up to 20

I wouldn't worry about that. Even when fully degassed, I can still get bubbles if I try. If you start at 20 and are still at 18 after an hour, I'd say you're done.

Your temp is a little low for degassing though. 22 would be better.

At this point are they little bubbles or big bubbles? Using my VacuVin I'll first pull out small bubbles over the course of a day or so and then big bubbles. If I stick with it I can pull big bubbles out for days. The big bubbles come right out of the sediment on the bottom of the carboy. I can feel it getting harder to pump and will stop my degassing. I'm thinking that once you see the big bubbles you're done.

Yeah they are pretty small still. I've only ever gone to 20 on the mityvac. Should I be going to 22? Don't want to blow a carboy :)

You should be fine at 22, but an hour at 18-20 should have you pretty well degassed as long as the wine is warm enough.

A simple test to see if you have any CO2 left in the wine is to nearly fill a small bottle with the wine, sanitize a cork or cap and plug the opening then shake the bottle for a few seconds and then release that cork . If you hear a popping sound there is still gas in the wine.

For context, the absolute limit that you can achieve on Earth is 30. I have routinely pulled 30 on my Italian carboys. YMMV.
