I am going to be mixing up a batch of 7.5# raspberry, 11.5# blackberry, 11#cranberry & about 2# of apple for a 6 gal batch. This is what I found in trying to clean out the freezer. I have more cranberries but none of the others left in the freezer. In looking over my yeast choice I am thinking about using a lalvin 1116 or a 1122. Can I get some opinions on which to use or is there a better choice. The berries are pulled and will probably take 2 days for all to thaw. Figure my skeeter pee will be done then and the primary will be open.
 
1116 or Cote des Blancs.
Get extra fruit for a f-pac later
 
I would also recomend cote des blanc. It keeps a lot of the fruit flavor intact after fermentation.
 
I have a mixed berry and I would only recommend that you consider not to mix them but instead make seperate batches of each. Although mine hasn't aged I know it's going to taste like crap. If I had the chance I would of made seperate batches and just blended them later after finished but maybe you will have better luck.

1 gallon raspeberry
2 gallon blackberry
2 gallon cranberry
 
This is going to be my first try at mixed. I have all the individual ones, raspberry & blackberry bottled for 6 months now and just bottled my cranberry last week. My apple is in a carboy now since September. The mix is for my curiosity. Thanks for the opinion, I to hope I have good results. Waiting at this time for my primary to free up as my skeeter pee is just over 1.000 and the frozen fruit is still pretty solid and will probably be ready about Wednesday to start.
