I have two carboys of muscadine wine, one of which is a blackberry blend. both are at least seven months old. I mistakenly put a tablespoon of kmeta in one and maybe two tablespoons in the other. I have racked each a few times.

Should I or could I add MLF bacteria now?

If you added sorbate to it, don't believe you want to try it. They say sorbate and mlf. give you a off taste. I havn't tried it, but no sense in ruining a batch when the cautions are out there. Arne.

If it has sorbate on board you definitely do NOT want to proceed with MLF...geraniums galore--ick, ick, ick. As long as you keep the SO2 levels up it should not go into spontaneous MLF. You could play it safe by adding Lysozyme, this will prevent any MLF.
