Wade,
Sadly, that's not my barrel setup, but it is a nice picture I had found to represent oaking. In December, I start using my barrels after I get another shelving rack to make room - then I'll replace the picture with the real thing. By the beginning of summer of next year, I'll be operating with three 5-6 gallon barrels and will likely stay at that level just because of space constraints (unless I can convince my bride that the wine factory should take over another room in the basement
).
I wonder if the association would mind if I dug out a cellar like the one pictured with those barrels in it underneath my back yard. It might not take me too long if I used a couple of nice spoons.
