I bottled this today after bulk aging it for about 5 1/2 months. Somewhat disappointed in the wine, good taste but very thin in the mouth. Has anyone else made this wine? I have made four of the AllJuice varieties and two of the whites (a Riesling and a Sauvignon Blanc) were "okay" nothing to write home about and the 4th is an Amarone which I have not tried as yet, but I did age it in an oak barrel.

What has been the general opinion of the MM AllJuice series? I'd be interested in your comments. Thank you.

From MM, I stick with the Ren. and Megliolis.

All indications are the AJ reds are a little thin. They could be better with a grape pack or raisins, but then it wouldn't be an "all juice" anymore. :d
However, Tan Cor Grand Cru could definitely help with the thinness.

I wanted to buy one of the AJ Petite Syrahs, but was told it was thin, so I never did.

I haven't made an AJ white, but I figure they are probably pretty good.

Thanks for the reply, Robie. I agree that the whites are better than the reds I have tried. If I were making this same kit now, I would have added and f-pack or raisins. I have a Renaissance (Pinot Grigio) on the way from George and I have a Meglioli white (Malvasia Bianca) in carboys right now and it seems to be doing quite well. I did add white raisins to the MB, though. I think it will pretty much be my MO from now on to add a grape pack, f-pack or raisins.

what to do

I tent to think what were are buying is really being thinned down to much, and the quality just isn't there,I have had people write me and state just buy a better kit instead of all the tweaking, and some have stated that kits are a waste of time make juice ,no matter what if you read all the threads you'll see that all of us tweak, every once in a while we hit on a good one and then thats a matter of taste also, but the discussion of not enough body in a wine is always at the for front of a conversation...keep tweaking rocky its the only way to correct a base line product and make it a better one..:dg

Use your oak barrel to concentrate the reds. It really will work wonders for a red AJ kit like yours. It may take awhile, but you will be pleasantly surprised.

If your barrel is relatively new and still very oaky, don't put the kit supplied oak in the wine, just let the barrel take care of the oaking.

If your barrel has lost most of its oakiness (neutral), then even better! Use it for concentrating and add oak cubes/spirals to taste. Once the barrel becomes neutral, that is when you can get some nice results with your kit wines.

Also, you can buy the Cellar Craft grape packs directly from The Winemakers' Toy store and add them to the AJ kits. That will also help.
