I just started fermentation on 24 pounds of strawberries yesterday. I plan on my first racking in 7 days. I was wondering how I could keep the must so I could start a skeeter pee a little easier. Do I freeze it in a canning jar?, How much should I keep?, How long will it last? Thanks in advance.
 
Use your gross lees right away if you can. If not put ALL in a plastic ziplock bag and freeze. Thaw when you are ready to use.
 
Wait a little longer with Strawberry. It is going to drop a ton of sediment. Every rack cost wine so don't it not necessary. The wine gods gets enough, they don't need extra
