My cellar is pretty cool in the winter, probably between 55 and 60 now. In order to ferment, I place the buckets in a tub of water and use adjustable aquarium heaters. Because I was having trouble getting the temp like I want, I purchased a external temp controller.
When the water cools off, the heaters are turned on. When it reaches the desired temp, it turns off. It can also turn on a cooling device but I do not need that.
I am thinking about insulating my carboy cabinet a little better and placing a heater in it.
I have about 20 bucks in this.
