Well, I got it going last night and pitched my yeast today. Starting sg of 1.11 just as Mr. Keller's instructions stated. The juice tasted divine prior to yeast being added (I was nosy).

Update: mustang wine

First rack on the mustang wine tonight. SG .998 acidity 6g/L. Tasted a tad musky, very fruity, slightly sweet and very very alcohol forward. >.< My first wine tasting. Was pleasantly surprised though.

Yeah thats a lot of alc for that type of wine but if following Kellars recipe thats typical and not desirable IMO. How many lbs of grapes per gallon did you use?
 
I used 10 pounds of grapes, cut back on the water a little and added strained grape juice instead so mine was more fruit than called for. I had been boiling the grapes down and straining the juice out to make jellies anyway so I cheated a bit. I did that because of people's posts about Keller's recipes.

The wine isn't bad, just really strong and it's really young, so I'm hoping it'll mellow in time.

The jellies were absolutely wonderful. I have 15 jars left.
