I have had an unusual spring and polination was crazy odd.

I went down the row with the Brix meter today. Virtually all of the Syrah grapes are around 22 Brix. They were also late when the weather had stabilized into a somewhat normal pattern.

The Merlot and Cabs had very odd polination are nuts and it looks like 2 harvests are in order. The Carmenere is a very light first crop and should fall with the second harvest. I'll just put them with what ever.

Now the question. I'd like to keep the Cab and Merlot separated but either one will only amount to 3 to 4 gallons each harvest. I'm guessing the second harvest will be within 10 to 14 days.

Should I do 2 completely separate ferments for each variety or is the timing close enough to just dump the new crush into the first fermentation.

I'm leaning towards 2 separate for each.
 
I’m with you. I’d go separate and blend later. Yes it is a bunch of ferments to keep track of, but that way you can control the final product. You might end up just blending them all, but think of what you’ll learn.
