hi all,

Paul from Ireland here

have been making country wines for last 2 years usually in gallon batches, this year i decided to make a bulk load of elderberry.
I picked 7.5 kilos of berries and destalked them(i normally leave stalks on) then dissolved 6kilos of suger in 22 liters of fresh spring water, poured this over the berries and allowed to cool, then added 4 teaspoons of yeast nutriant and 4.5 teaspoons of pectolace and stirred it up. i left this for a few hours then sprinkeled over a 5g packet of lavlin RC212 yeast.
this all seemed normal to me just on abigger scale than i'm used too.
My problem is after 3 days there's no sign of anything happening, no foam forming on top not even a bubble, why?
do i need to wait longer? was my yeast off? or should i start again and go back to a gallon load?

any input here will be much appreciated.

Welcome,

Take a hydrometer reading to see if you have fermented dry already.
 
Did you rehydrate the yeast before adding it in?

What was your starting SG? Like Julie said - take another reading see what the SG is - if it is lower - it is working.


What is the temp? Cooler temps hinder the yeast from performing.

hey thanks for the advice.

the o.g. was 1.060 and when i retested was 1.040 so seemed to be working.

then when i got up this morning the bucket was over flowing this was a 32 liter bin and there was 5-6 inches of head space. really shouldn't have left this in the kitchen, had a big mess to clean up this morning!

Can not possibly imagine having to clean that up. Wife and I have been together for 40 plus years but that mite be the breaking point. lol. Luckily I have a dungon of a basement that has a concrete floor. If somthin bad happens there, no worries. I pretty well stay out of the kitchen. Just bought a sink for the basement today, now have to find some kind of stove to use in my winemaking. Keep everybody happy. Arne.
