Hi
I am new to all this. I have a batch of banana going now.
I got the recipe from an older gentleman.
Now I have read so much I not to sure about it.

Hi damudman,

Welcome to winemakingtalk, please post up your recipe and procedure so we can help you out.

Banana 16# cut up with peal (put in mesh bag)
15 lb sugar
3 lemons
3.5 gallons water
boil water stir in sugar
let cooled over night
pitched 1118 yeast
stir once a day for 1 week
add 3 large boxes white raisins
let set 3 weeks
(do not stir)
this was done in a 10 gallon crock covered.
Racked into 5 gallon carboy with air lock
I did not get Sg untill I racked it is 1.030 been in carboy 3 weeks still Sg 1.030

So basically you are making about 15 liter wine and added 7 kilo sugar to it.
And then here is the sugar in the bananas that have to be counted for.

So basically there is way too much sugar in your must.

If the wine has stopped fermenting then be sure it is done and you will have a very sweet wine.
