Freezing makes the wine mature quicker, but not as well as when aging is done.
It tends to take out the mid-range flavors.
Sometimes one can freeze a small plastic bottle of a very young wine for about two weeks; then let it thaw naturally. Doing this will give one an idea of how the wine will taste if aged normally for many months. However, after freezing it won't be quite as good as it truly will be if aged naturally for the equivalent time.
