My wife is going through an orange eating phase. It’s some sort of fad diet or vitamin thing but didn’t want to ask, BUT… I’m looking at the orange peels thinking “what kind of fermentation can I add those peels to”. Waste not, want not and all that...

Never having used orange peel in anything I’m looking for suggestions.

I make limoncello and limecello, lemon or lime zest macerated in vodka or EverClear, diluted to 30% (60 proof) and backsweeten.

And I've done the same with orange zest in cognac. This is not fermented, but it extracts the flavor and aroma.
