I bought a peach wine concentrate and want to infuse jalapeños into it

How much jalapeños would you add for a 5 gallon batch?

I don’t want it to be too spicy but I don’t want just a hint, somewhere in between

Peppers can be tricky. Heat levels can be all over the place.

Dedicated jalapeno wine recipes call for 16ish peppers per gallon so pick a number below that. 8ish?

I've never made jalapeno wine but I have made 8 others with different peppers, from sweet to superhot, and they make a wonderful wine. Personally I think the hotter ones make a great cool weather wine and they all seem to beg for a food accompaniment.

BTW, I noticed my pepper wines get hotter with age.

One method is to make the fruit wine then add peppers when fermentation is almost done to let the heat infuse into the wine. You have more control of the heat level to that way.

Beware the seeds! Have made two batches of Jalapeno wine. First one was great, the second one was hotter than Hades. The difference between the two were the amount of seeds I let into the ferment. The first one had almost no seeds, great flavor, some heat.
