We did the 5th racking today and back flavored with fresh peaches I simmered down and sweetened with simple sugar to 1.010. I hope it is the last racking. LOL
We wound up with 5 gallons from 50 pounds of fresh peaches.
It still needs to clear but it had a decent peach flavor. I plan to keep an eye on it to see if more lees fall and then age for 6 months and then decide if it needs to age longer.
I just did a peach wine as well that's at 3rd rack and mines a much lighter color. But I'm thinking you will have a couple more racks in the future buddy
Yes it is quite dark but I think it was from simmering the fresh peaches for the fruit pack way too long. They did not burn but their syrup got very dark.
I am sure it will lighten up in future rackings though
Yes it was very clear. It is in the crawl space now and not easy to get too. But I will do another photo when I check it next month if you like. We had to put it there because it is too warm in the house....
FWIW it fermented to .99 in a few days (have to look at notes - in the other room) and it was in the upper 80's during fermentation. And it tasted decent yesterday with a decent peach flavor that I am quite sure the peach flavor will come up as it ages.
I did use pectin enzyme as the frozen peaches thawed in the fridge
