Or you could lock the lid down and ferment dry in the bucket, its up to you.

Ok, so my secondary fermentation seems to be going nicely. It's been 5 day's since I moved it into the carboy and the bubbling has definetly slowed but still happening. Should I tage an sg reading now or wait for all bubbling to stop and rack again?

Take a reading daily, you're hooting for 1.00 orlower. When it stays the same for three days in a row it's generally done fermenting.

Sounds like a plan. Today I drew a small sample (couldn't resist) even though it is still fermenting. It is a little cloudy and I guess that is to be expected, and there is an overwhelming carbonation like taste to the wine. I guess this is normal too.
