Hi all,


I'm making a Wine Expert Selection Amarone kit. All was going beautifully until clearing....the wine did not clear properly and quickly fouled my filter pads when I tried to filter it.


I have now racked the wine off of the sediment but it is still not clear. I have more Chitosan...should I just try to repeat the clearing step, or is there something else I should try?

Yes, try it again. I dont like the whats included in the W.E. kits pack and usually put it aside and just buy a pack of SuperKleer KC.
 
Is the Amarone completely degassed, Bob? Gassy wine won't clear very well. If you haven't already, try warming the wine up to 75'. The warmer temperature will help in both degassing and clearing. I believe the WE Amarone needs a couple of years of aging to start tasting good, so don't be in a rush to bottle. Let it sit a month or so at the warmer temp and see if it doesn't clear up.
 
Jim is right I believe. A gassy wine won't clear well. You won't be able to filter it until it is clear; otherwise, you will go through many filters trying.

How long did you let the wine set for clearing after adding the clarifier?
The WE kits need sediment to be present when the clarifier is added. Without lots of sediment, it won't work well. When you added the clarifier, did you have sediment present and did you stir up the sediment well?

Dont be in a hurry to rack. I would wait at least 3-4 weeks after adding any clearing agent.
 
I too, am having problems getting this WE Amarone kit to clear. It's definitely NOT gas. Very few bubbles in a vigorous 2nd attempt to de-gas it. So I'm trusting my instincts, and forum suggestions, and adding a second clearing agent.
