I live in Arizona and its hard to keep the house under 78 degrees in the summer time. I have an unused bedroom with an extra A/C unit for my beer fermentation which I keep around 65 degrees. Before Itry my hand at wine I need to know what temps are required. My Grandfather made wine back east in the cellar so I assume it needs to be somewhat cool.

I appreciate any help and thankyou.

78 is not out of the question as an acceptable temp Ron but I would not want it to be too much higher

anywhere between 65 and 78 should be fine. Heck, it can be a bit cooler and a bit warmer. Fermentation is slower at cooler temps and quicker at higher ones - Just like beer. So if you put your wine in the same room as your beer, you are most definitely okay.

Welcome Ron,

For kit wines...65 degrees is a bit cool even though it falls into the range suggested by the manufacturers which is 65-75 degrees. Tim Vandergrift from Winexpert feels that 75 degrees is the optimal temperature for fermenting kit wines.

From my experience reducing the room temperature from 70 to 65 adds at least an additional 7 days to the fermentation time.
