Recently made a WE selection Pinot noir & Barolo, bit kit directions indicate not I rack before degassing. Not to rack before clarifying. In fact both kits direct you to stir all the sediment back up, degass and clarify. (I must admit I was skeptical, but it works and makes it easier considering you don't have to rack)

Now I am starting a WE selection Brunello.
These defections have me rack between step 2 & 3, secondary and clarifying/degassing.

I have no issue following directions, but am curious why the difference from one kit to another.

Any ideas?

I think its as simple as the grapeskin kits have a lot more dissolved solids, which could overwhelm the chitosan and not clear propeerly. I have noticed when doing that kit, the sediment left behind at that pre-clarifying racking is very fine, and not too deep. I choose to rack without my sediment bowl, therefore getting a little more of my wine to clarification.
BTW, the Brunello is a terrific kit.
 
Good question. RJS directions for VdV kits have you ferment dry in primary bucket whereas for the higher end kits you rack to a "secondary" to finish fermentation. Maybe for the same reason wineh posted above?
 
I have heard nothing but good things about this kit. Can't wait for it to finish so I can run it through and oak barrel.

I am also confused as to why they have you add the oak cubes during clarifying stage, since it is only there for about 10 days. I know that cubes can take atleast 6 weeks to give what it has.
Guess cleaning cubes and bulk aging with them is in order!
