Can you store your wine in mason jars or does that not give a good enough seal?
 
In my experience, and for other uses, Mason jars seal well. Perhaps too well for wine. A cork closure lets just enough air in the bottle so that the wine can age well.

IMHO, they seal well enough. The problem is eliminating enough of the volume of the headspace per unit volume of the wine. Something with a neck (wine bottle, carboy, demijohn) allows for a much smaller volume of air.
 
While mason jar seals are fine for acidic things like tomato juice etc but I wonder if that is also true for wine which is acidic and has alcohol - would those two together degrade the seals or worse, taint the wine? Of course as Mhopkins states perhaps it possible to have too good of a seal as well.
