I would start with a zin/ Primitivo ,
It’s an early drinker, (I don’t drink mine until 2 years after) Cabs, Sangiovese, Merlot etc 3years.
Ive only used grapes so I don’t know anything about kits, frozen must or juice but some of my fellow winemakers use juice to make their white wines and it comes out very good.
