OK one word WOW !



this week i have bottled my Renaissance chianti...



i had a beer bottle size leftover of wine (i had to put it in a clean
beer bottle because i didnt had enough clean and sterile wine bottle

I dont know if the offect of putting a cork (and changing the pressure
in the bottle affect give the "shock" but with a beer bottle cap after
3 day the "shock" was not perceivable



Anyway, This wine is incredible at bottling day. It was very very
slight sour but will improve a lot. yep still very young but Awesome



the color is nice and the raisin add-on give it a lot of body.

I have notice that with mosti product whan you add raisins (like in the port)

the wine is much more different form any other grape pack kit.

like if there was an oily film but there isint. it's hard to
describe but there is a difference and feel in mouth. the body and
aroma are awesome. i havent taste a bit of KT in there.



this one will be a winner for sure!



Since it was my first Mosti 16L kit it wont be my last!



the product is on the high end spectrum, the product clears like no
other kit i have made, the main plant is at about 30Km from my house
(im a local buyer :D )

David, did you bulk age your Chianti at all? I plan to letmine bulk age for a few months to make sure all the sedimenthas settled, do you think it is necessary?


I am very anxious for this one!!! If the taste is any where close to the aroma it had during primary fermentation, I will be very pleased. Thanks for the input.
 
i have followed the instructions.



i need to free carboys for those limited kits

this one clear like no one i have seen before.



i always filter my wine to be sure it's clean and sediement free.



this 16L kit can be ready to filter in 4 weeks but they suggest at least 6 to 8 week after the process before bottling.



since mosti use more juice in their product Instead of too much
concentrate, there is a longer waitiing period associated with the
ending results.



i prefer having them under bottle instead of too much carboy aging
(since carboy aging is not that mch different from bottle aging.



The main difference is that when you carboy age.... you are not willing
to taste a bottles once in a while, i mean you wont risk to spoil 23L
juste to taste here and tehre... .



When the wine is in bottle it's very hard not to taste it often

Anyway since i prefer having more wine in bottle that stopping my
process with full carboy i only bulk age about 1 month more than the
instruction.



You wont be deceived by this Wine! from what i can say the
quality is much better than the limited WE kit i have made in the past.
(and from where i buy it it's cheaper than WE limited and also it's not
limited

Next one will be another Renaissance kit with Raisins

Since i love big red i will opt for the Rojo Intenso (i think that's
the good name) (im sure about the rojo part ;P i dont want to mix it
with those meglioli kit!

I would like to know what you use to filter your wine. I have tossed this idea around in my head, but being fairly new to this I am trying to budget myself

at my wine store the rent wine equipement.



i use a vacuum pump and the "plate" filters.



they consist of 2 round thick paper filter that you install in a plastic holder.



you take one carboy (clean and empty) that you use to make a vacuum in
it (using the pump) and this vacuum pull the wine from the "to be
filtered" wine and make it pass in the filter and then end up in the
carboy.



since it,s a vacuum it pulls the wine insted of pushing it (and oxygen) into a filter.

takes a bit longer but it's safer for the wine.



i always filter because me also i cant stand floaties in the bottle.

filter cost me about 4$ for 1 or 2 batch (depends on the wine if it,s very clear or have some cloudy aspect.



visit your local LHBS (Local Home Brewing Store) maybe they rent that kind of equipement.



At my lhbs i pay 20$ per year and i can borrow anything i want.

Member have acces the the bottle tree, the vacuum pump, carboys for filtering (not for production

) capping(beer) and bottling device.



i have all of the abouve exept the filtering plate and vaccum pump.

Next chritsmas i should have the pump

Maybe there is some feloow winemaker in your region that could rent you or let you try a pump and pads.

I rent filters, corkers, bottlers, presses, basically whatever you want at 10% of the list price. Then all payments are applied to a purchase, so it is basically a 0% layaway program. Rental payments from multiple items can be combined and used to purchase a single item. For example, if you rent the corker 5 times and the filter 3 times, you will have paid $110.00 in rental payments so you could use those payments to but the Italian Floor Corker.
 
Transfered off of lees and added stabilizers and clearifiers. I liked the idea of degassing for 24hrs before adding the clearing agents, it seemed to work really well!!! I will post on how well it clears, but initial signs look real good. Pictures to come!!!
 
Transfered to bulk aging carboy this morning, this wine cleared really nicely. My wife and I both tasted it and we are very pleased with the results. We can hardly wait on this one
