Hi everyone,

I just racaked my Vino Vida Johannesburg Reisling out of the primary and into the carboy last night. I followed all of the directions to the letter with two exceptions.
1. It actually sat in the primary for close to 10 weeks. Life happens.

2. I used the sorbate packet that came with it for another wine. I was also told that I probably shouldn't have as it will impart a funny flavor and was not necessary to knock out the yeast in that wine (for reasons beyond this discussion), so I figured I would just skip adding it to this batch. SG was at 0.966 at last night's racking.

Here is my question:, I have an extra "part." There is a foil packet labeled "#2 Stabilizer" that I could find no mention of in the directions. Was this supposed to be the 2nd sorbate pack? WHen should I, or should I have, already added it? Should I just throw it away and pretend nothing happened?
 
The second pack is probably K-meta (Potassium Metabisulfite). If you plan to keep the wine dry it shouldn't be an issue. Although if you plan to age it you will want to add the K-meta. If you plan to backsweeten this wine (as I know many rieslings are on the sweet side) you will also want to add the sorbate.
 
I don't know anything about that kit. Did it come with an F pack (flavor pack)?
 
I just bottled a CC Johannisberg Riesling and it did not come with an f pack but did come with a small (less than 250 ml ) bottle of wine conditioned. The kit also said " Let the wine rest at least 2-4 weeks after bottling. Then serve lightly chilled. Usually enjoyed within 12 months." So it is for drinking this summer. Hopefully it will help keep me out of the Winery Series" wine:slp
