Hey all, thanks for sharing the great info. It's already helped quite a bit and got me going on this excellent lifestyle!
OK, so I'm underway on my first kit.
Was in the primary for a touch over 5 days, then the SG readings where on, so I went onto the second phase. It was about 1.006 at this point.
I've now had it in the carboy fermenting for about 4 days, and the reading is at 0.995.
My question is it says to degas it, add the chemicals, after 10 days. Saying that the reading should be 0.998 at that time or lower.
So do I keep going till the full 10 days? Or move on now as the readings say it may be ready?

I wouldn't rush it. Letting it sit helps it to develop a bit more body and flavor and finish out. Just remember you will have to keep it warm through secondary and the degassing phase. After it has cleared you can let it drop to room temps but for now it should be held warm 70-74 degrees.
