I am new to wine making and in the process of making a Chardonnay. I have the selections brand kit and am currently on stage 3 of the process. The instructions read to check the hydrometer reading after 10 days and should read .996 or less. My batch is currently reading .999 and it has been 12 days. My question is, do I continue to wait to see if it will obtain the .996 reading or is it ok to proceed to the clarification and degassing stage?
 
MDV...what is the temperature of your wine? Have you checked with plain water to make sure that the hydrometer is reading correctly?

The temp averages 69degrees in the basement. I bought a fermenting heater a couple of days ago and the temp has been at 75 for the past two days. The hydrometer is 1.000 with plain water. I will check again tomorrow, however if it does not drop to the recommended reading what are the consequences?
